Here are two recipes from the Roman
cookery writer, Apicius.
IN THE KITCHEN
Most food was cooked in pots over a
charcoal fire. The cook prepared the
main meal of the day in the
afternoon. Wealthy Romans often
asked friends to join them for dinner.
This kept the cook busy producing
fish and meat dishes and strong-
tasting sauces.
