With few fruit or vegetable resources, the
Inuit had to rely on meat for nearly all their nutritional needs. Scientists have found
that by eating meat raw, the Inuit were able to take in large amounts of vitamins
stored in the animals’ tissues. For example, whale skin was a good source of vitamin
C, while raw liver provided vitamins A and D. In addition, the fat from these animals
provided the Inuit with an important source of energ y.
