Bottom Layer Classic
Nanaimo Bar
125 mL (½ cup) unsalted butter
75 mL (5 tsp) cocoa powder
50 mL (¼ cup) granulated sugar
1 egg, beaten
425 mL (1 ¾ cups) graham wafer
crumbs
250 mL (1 cup) shredded coconut
125 mL (½ cup) almonds, finely
chopped
Middle Layer
125 mL (½ cup) unsalted butter,
softened
40 mL (2 tbsp + 2 tsp) whipping
or heavy cream
30 mL (2 tbsp) vanilla pudding
powder
500 mL (2 cups) icing sugar
Topping
115 g (4 oz) semi-sweet chocolate
30 mL (2 tbsp) unsalted butter
Directions
Bottom Layer
1. Pour 500 mL (2 cups) water into
bottom of double boiler. Place on
stove over medium heat. Bring water
to simmer.
2. In top of double boiler combine
butter, cocoa, and sugar. Place over
